Kaju Chocolate Cookies /Cashew Chocolate Cookies



Today's recipe is a yet another mouth melting cookies with the flavor of chocolate and the crunch of cashews.
These cookies are rich with a buttery flavor,chocolaty taste with a mild sweetness.Its perfect for gifting as it stays fresh for longer.The dough can be rolled out and cut with cookie cutter or sliced with the knife.Here I used 1 inch square cookie cutter to cut the dough.

   Basic Information

   Preparation time 15 minutes
   Chilling time 15 minutes
   Baking time 18-20 minutes
   Makes 22-24 cookies
    


   Ingredients

Quantity
All purpose flour/maida
1 cup
Butter/vennai
1/2 cup or 1 stick
Cocoa powder
1-2 tbs
Icing sugar or powdered sugar
1/2 cup+1 tbs
Salt
a pinch
Baking powder
a pinch
Milk
1 tbs(if needed)

    Method 
  • Mix in all purpose flour,cocoa power,baking powder and salt in a bowl and keep it aside.
  • In a bowl take the butter and powdered sugar.Cream it well with a whisker or spatula,to this add  flour mixture.
  • Mix it to form a dough.If the dough is too crumbly then add some milk and knead it to a smooth dough.Refrigerate the dough for 10-15 minutes.Now take the chilled dough and flatten it on a floured surface or a parchment paper.With the help of rolling pin roll the flatten dough to 1/4 inch thickness.Sprinkle the chopped nuts on the rolled out dough and roll it gently with the rolling pin.
  • Trim the edges and cut it with a cookie cutter.Arrange it on a lined baking tray. Pre-heat the oven at 325 F and bake it for 20 minutes or until golden.
  • Store it in an air tight container after its completely cool down.


  • The cookies will be crispy once its completely cool down.Do not bake it more than 20 minutes.
  • Instead of icing sugar,regular sugar can be powdered and used.
  • Use a sharp knife and slice the dough,if you are slicing.Don't slice it too thin.
  • If salted butter is used then no need to add salt.
